Tonight I took a recipe my mom had for date oat bars and made a whole bunch of substitutions and tweaks to make a cranberry oat crumble that is dairy-free and gluten-free. It's delicious 😋

I have a lot of fun doing this sort of recipe tinkering. I keep a kitchen lab notebook for the recipes I create or modify. My spouse suggested that I show it to my chemistry students. I use a lot of the same habits

I get a kick out of this "budget meal hack" trending hashtag on #scoopz at the moment.

It's always WAY over complicated, and made with processed food, and not actually budget because it costs like 3+ dollars a meal.

If you actually learn how to #cook #baking use staples/seasoning, and plan ahead, THAT is the real budget meal hack.

Don't say you need money. I do this on #disability

I did stress-baking yesterday and it was an epic fail. It made the house filled with smoke. I ended up feeling even more stressed than before. The spousal unit took me out to get (gluten free) poutine for dinner as a consolation so that was nice. Poutine is a comfort food.

Anyway, the epic baking fail was because I thought it would be a great idea to change the composition of my own tried and true, gluten free flour mix. I couldn't have been more wrong.

I tried again this morning with the original flour composition (equal part of glutinous rice flour, regular rice flour, tapioca starch and corn starch) and it was, once again, a great success. I got myself a lovely, vanilla loaf cake and learned myself a valuable lesson.

Hi #baking folks, what's your favorite #vegan replacement for egg yolks in cookies, specifically just the yolks. Even searching Kagi is turning up no conclusive information. Recipe calls solely for yolks, no whole eggs. Isn't critical, but would love to try. #askfedi

EDIT: Thank you for input, but I have ready substitutions for *whole* egg. I explicitly need *yolk*. 99% of blog posts that say 'yolk' proceed to regurgitate the same info for whole eggs instead. But I'm still glad to get confirmation on others for whole egg!

Celebration brownies! This time, it's a dual-celebration: I turned in the edits for Enchanting the Fae Queen, and my teenager achieved a massive milestone of his own.

Victory tastes DELICIOUS. ;)

What to do when you have leftover lemons and aging blueberries?
It turns out you bake glazed lemon blueberry bread.
We were going to need snacks for our sign making session anyway.
A new recipe for me but I am happy with the end result.
Moist and not too sweet.
Summer was watching me bake and looked interested for a few minutes. Obviously the interest gave way to a nap.

I was a little indisposed Thursday night, but I baked this orange blossom honey almond yogurt cake and absolutely loved it! Would play more with spicing and the like next time to tweak slightly, or maybe do something with apricots for filling or even a blend!
