James Akers<p>What a fun an busy week. I managed to stuff the doodle I coated and pulled myself into an acrylic box with paracord. I think I could use a larger box in most areas... and a slightly different box design... But I am certainly excited about putting more doodles in boxes and making them way less fragile.</p><p>I also baked a few breads. I am currently on bread 14. Here is a photo of bread 12 (top with additives) and bread 13.5 (second bread of a kilogram flour starter mass) also with the same cashews an olives. <br>With bread 13, I have begun noticing my liquid starter will be all floating about 12 hours after I feed it on a good day. So for bread 13 I caught it at one of these moments of peak ripeness before inoculating the bread dough with it. I also have been going in the fridge at night and taking it out during the day for two days. James Akers<p>Bread 8 update-</p><p>Sitting on the train to NJ to help some folks from Texas drive a box truck into downtown Brooklyn. In the box truck is the giant collaborative neon sign I made with Alicia, Jason and Marco in Texas. We are headed to Urbanglass where it will be installed (tomorrow) till May 5th. Then teaching neon inkscape patterns tonight at Urbanglass- busy day!</p><p>More on this later.</p><p>Bread 7 didn't really rise, and bread 8's rise wasn't spectacular, but I did get the additives to flour mass ratio to my liking (75% of the flour mass) and I am learning to really make a nice crust with the baking schedule. </p><p>I am playing with two different starters- one liquid and one stiff and dry. I wanna make breads with them. It might be the childhood trauma that says, “if you are going to learn to do *this,* you will learn to do it right.”</p><p>I’m watching different videos after each attempt, then refining my technique after each attempt and “lesson.”</p><p>My lame cut worked perfectly. <br>Hopefully the pan under the Dutch Oven and the silicone mat a the bottom of it helped the bottom of the bread not get so over done. </p><p>I give you: Carb City, albeit a delicious one</p>
